Flageolets with Thyme and Garlic

3 cups dried flageolet beans -- (18 oz) rinsed, drained &

picked over

pulp from 1 bulb of Caramelized Garlic (pg

40)

1/4 cup fresh thyme leaves

4 cups vegetable broth or Vegetable Stock (pg 9) -- (to 5 cups)

salt & freshly ground black pepper to

taste

 

Place all the ingredients in the insert of the slow cooker. Stir to combine,

cover, and cook on high for 6 hours, adding more broth if necessary, until the

beans are tender but not mushy. Before serving, season with additional salt &

pepper if desired.
