Caramelized Onion Soup (Slow Cooker Cooking)

3 cups Caramelized Onions (Slow Cooker Cooking) -- (to 4 cups)

(page 10) drained

cooking liquid from Caramelized Onions

plus enough vegetable broth to make 6 cups

salt & freshly ground pepper

6 thick slices French bread -- toasted

1 cup grated Gruyere cheese -- (a generous cup)

 

Preheat the broiler to high with the rack in the upper third of the oven. Place

6 ovenproof bowls on a heavy-duty rimmed baking sheet.

 

Combine the onions, cooking liquid, and broth in a large pot. Set it over

medium high heat and bring the mixture to a simmer. Season with salt and pepper

to taste.

 

Ladle the hot soup into the bowls, top each one with a slice of toast, and

sprinkle generously with cheese. Set the baking sheet under the broiler and

broil until the cheese melts and begins to bubble. Serve immediately.
