Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

1/4 cup olive oil

4 cloves garlic -- peeled & minced

2 large sweet onions such as Maui or Vidalia -- peeled & chopped

OR 2 cups Caramelized Onions (page 10)

1/4 cup packed brown sugar

1/4 cup balsamic vinegar

2 tablespoons honey

1 tablespoon salt

2 pounds large golden tomatoes -- seeded & chopped

2 large yellow peppers -- cored, seeded & cut into 1 " pieces

1/2 cup Vegetable Stock

2 tablespoons fresh oregano leaves

freshly ground black pepper

Heat the olive oil in a large saute pan set over medium heat and cook the garlic

until light golden brown. Use a slotted spoon to transfer the garlic to the

slow cooker. If you are using raw onions, add them to the pan and cook,

stirring frequently, until golden brown. Scrape them into the insert of the

slow cooker and the add the brown sugar, vinegar, honey, salt, tomatoes, bell

peppers, broth, oregano, and pepper to taste. Cover and cook on low for 6 to 7

hours or on high for 3 to 4 hours, until the vegetables are very soft. If you

are using caramelized onions, stir them into the hot tomato sauce at the end of

the cooking time, then cover the insert and allow the onions to heat through.

Mash the sauce with a hand-held potato masher to create a chunky sauce. Taste

and season with additional salt and pepper if desired.
