Slow simmering produces a mellow blending of flavors, but whole herbs and spices

may give more flavor than usual, while ground herbs and spices may give less

flavor. You may want to taste for additional seasoning before serving. Remember

to remove bay leaves and whole peppercorns before serving.

 

Some vegetables, especially carrots and onions, often take longer to cook than

the meat. Place them in the bottom or along the sides of the cooker and cover

with liquid which helps the food to cook more quickly. Ingredients are often

layered in a specific order with longer cooking ingredients placed in the bottom

where they will cook faster and be done with the rest of the ingredients. Stir

only if the recipe tells you to.

 

Both regular and quick-cooking rice need 4 to 5 hours to cook on low. On the

high setting, it will take at least 2 hours. You may prefer to cook the rice on

the stove, then stir into the mixture about 30 minutes before the end of the

cooking time to heat through.

 

Pasta needs stirring while cooking to prevent the pieces from sticking together.

It is best to cook the pasta separately just until tender, then drain well

before stirring into the cooked mixture. The pasta will not overcook if added at

the end of the cooking time.

 

Tender vegetables such as fresh mushrooms, tomatoes or zucchini will only need

to be added for the last 30 to 45 minutes of cooking time, otherwise they might

overcook.

 

To prevent milk, cream, or sour cream from curdling, add near the end of the

cooking time and just heat through.

 

When converting your favorite recipes for the slow cooker, reduce the amount of

liquid since the slow cooker lid gives a tight seal and retains the steam. Pour

the liquid in last, usually at least 1 cup. Fill the cooker at least one-half

full of food for best results.
