Guest guest Posted March 23, 2001 Report Share Posted March 23, 2001 Lentil Stew 1 C. lentils, rinsed & drained 1/2 C. chopped onions 1 Tb. minced garlic 1 C. mushrooms, thickly sliced 1/2 C. diced carrots 2 stalks of celery, diced 1 sweet potato, peeled & cubed 2 potatoes, peeled & cubed 1- 15 o.z. canned diced tomatoes w/ italian herbs 1 tsp. italian seasoning 2 bay leaves 1 tsp. old bay seasoning 1 1/2 C. veggie broth 2 tsp. maple syrup fresh ground pepper Place all ingredients in CP stir well. Cook for 6- 8 hrs. Check halfway thru to see if it needs more broth. Add more if necessary.Stir the stew occasionally. Can be served alone or over grain of choice.
