Guest guest Posted March 17, 2001 Report Share Posted March 17, 2001 * Exported from MasterCook * Triple Applesauce Recipe By : " Slow Cooker Cooking " by Lora Brody Serving Size : 0 Preparation Time :0:00 Categories : Desserts Fruit Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 6 large firm, flavorful apples (such as Fuji, --Cortland, Baldwin or Granny Smith) --stemmed and quartered -- (see note) 1 1/2 cups dried apple rings --each ring cut into 4 pieces 1/3 cup sugar Finely grated zest and strained juice of 1 large lemon 1 cup apple cider 1 cinnamon stick 1/2 teaspoon ground nutmeg 1/2 teaspoon ground cloves 1/2 teaspoon ground ginger Place all ingredients in the slow cooker insert. Cover and cook on low for 5-6 hours or on high for 3 hours, until the apples are very tender. Discard the cinnamon stick and use a slotted spoon to transfer the apple solids to a food mill or a food processor. Puree them, and add enough cooking juices to achieve the desired consistency. Serve the applesauce warm or cold by itself, or as an accompaniment to meat or game dishes. Makes 4-5 cups. Note: If you are using a food processor to puree the fruit (rather than a mill), core and seed the apples before you cook them.
