Cooking Beans in the Crockpot

1 pound dried beans

5 cups water

 

Rinse and drain beans, discarding any foreign matter. Soak beans overnight

in enough water to cover by several inches. Rinse and drain.

 

Place soaked beans in a 3 1/2 quart crockpot. Pour in 5 cups water, cover

and cook on low for 5 to 7 hours or on high for 3 to 4 hours, until desired

tenderness.

 

Yield: 5 1/2 to 7 1/2 cups of cooked beans (depends on variety)

NOTES : The easiest way to cook beans for use in other recipes is in the

crockpot. Use this basic recipe to cook large quantities of beans and then

freeze in recipe-sized amounts in freezer bags so you always have cooked

beans on hand.
