Guest guest Posted March 12, 2001 Report Share Posted March 12, 2001 * Exported from MasterCook * Curried Lentil Soup Recipe By :Quick Cooking Serving Size : 10 Preparation Time :0:00 Categories : Soups & Stews Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 cups hot water 1 can crushed tomatoes -- (28 ounces) 3 medium potatoes -- peeled and diced 3 medium carrots -- thinly sliced 1 large onion -- chopped 1 celery rib -- chopped 1 cup dry lentils 2 garlic cloves -- minced 2 bay leaves 4 teaspoons curry powder 1 1/2 teaspoons salt -- optional sour cream -- for serving Combine all ingredients in slow cooker, stir well. Cover and cook on low for 8 hours or until vegetables and lentils are tender. Discard bay leaves. Place a dollop of sour cream on each serving. Yield: 10 servings The soup may be frozen in freezer bags. Thaw and reheat to serve.
