Guest guest Posted March 1, 2001 Report Share Posted March 1, 2001 Italian Vegetable Soup Makes 12 servings 4 cups vegetable broth 4 cup tomato juice 1 tbsp. dried basil leaves 1 tsp. salt 1/2 tsp. dried oregano leaves 1/4 tsp. pepper 2 med. carrots, sliced (1 cup) 2 med. stalks celery, chopped (1 cup) 1 small zucchini, chopped (1 cup) 1 med. onion, chopped (1/2 cup) 2 cloves garlic, finely chopped 1 can (28 oz.) diced tomatoes, undrained Mix all ingredinets in a 4-5 qt. crockpot.
