(These are not all veggie recipes, but there are some good ones!)

[CROCKPOT-RECIPE] Banana Bread -----Slow Cooker

 

 

Banana Bread -----Slow Cooker

 

2 cups flour

1 cup sugar

1 tsp baking powder

1 tsp salt

1/2 tsp baking soda

1/2 cup shortening

1 cup (2 medium) mashed bananas

2 eggs

1/2 cup choppedwalnuts

1 tsp grated orange peel

 

1.) Grease a 9*5 inch loaf pan with shortening. Dust with flour and shake

out excess. Set covered pot on base and preheat at Setting #4 while mixing

ingredients.

2.) In a large mixing bowl, combine all but nuts and peel, beat at medium

speed until evenly blended. Stir in walnuts and orange peel. Pour batter

into pan. Place pan in pot.

3.) Cover and b ake at Setting #4 for 2 hours and 15 minutes. Do not

remover cover during this time. To test for doneness at end of recommended

baking time, insrt a metal cake test in several places including center of

bread. If cake tester come out clean, the bread is done. If batter clings to

cake test, continue baking for 15 minutes intervals. Allow bread to cool 15

minutes in pan on cooling rack. Remove bread from pan. Makes a 1 1/2 lb

loaf.
