Guest guest Posted February 24, 2001 Report Share Posted February 24, 2001 This is a recipe that I have cooked in the oven for some time and decided to convert it to a Crockpot. I hope you all enjoy it. It is really a good one. The notes in parenthesis are the changes I made to put it into the Crockpot. If you choose to make it the original way ignore them. Luscious Vegetarian Lasagna The Treasure of Creative Cooking By: The Editors of Consumer Guide 1 can (14 1/2 oz.) tomatoes, undrained 1 can (12 oz.) Tomato Sauce (I used only 8 oz.) 1 tsp. dried basil leaves, crushed 1 tsp. dried oregano leaves, crushed Dash Black Pepper 1 large onion chopped 1 1/2 minced garlic 2 TBLS olive oil (don't need in the crock pot) 2 small zucchini (I prefer a little more) 8 ounce mushrooms sliced (I used a 4 oz. can) 1 large Carrot (I like to add another small one) 1 Green Pepper, chopped 1 cup (4 oz.) shredded mozzarella cheese (I use almost double) 2 cups cottage cheese 1 cup grated Parmesan or Romano Cheese (I use a 5oz. brick of Romano) 8 oz. lasagna noodles, cooked, rinsed and drained (I us one box of " Oven Ready " Lasagna noodles) Crockpot Directions: Mix together everything except last 4 ingredients (cheeses) in a bowl. In another bowl mix together the remaining ingredients (cheeses). Spray crock pot with pam or coat with oil. Put a small amount of vegetable sauce in bottom of crock pot (just enough to lightly cover). Put a double layer of noodles on next, breaking to fit. Put half of the cheese mixture on top of noodles. Put half of the vegetable mixer on top of cheese. Repeat noodles, cheese, and vegetables. Cover and cook for 6 - 8 hours on low. Oven Directions: Simmer first 5 ingredients in medium saucepan over low heat. Cook and stir onion and garlic in a hot oil in large skillet over medium-high heat until onion is golden. Add vegetables. Cook until tender, 5 to 10 minutes. Stir vegetables into tomato mixture: simmer 15 minutes. Combine cheeses in a bowl; blend well. Spoon about 1 cup sauce in bottom of 12x8 inch pan. Place a layer of noodles over sauce, then 1/2 of the cheese mixture and 1/2 of the remaining sauce. repeat layers. Bake in preheated 150* oven 30 to 45 minutes or until bubbly. Let stand 10 minutes.
