Guest guest Posted February 15, 2001 Report Share Posted February 15, 2001 Title: Carrot Onion Casserole Categories: Casseroles, Crockpot, Side dish, Vegetables Yield: 6 Cups 6 c Diagonally sliced carrot 1/2 ts Salt 1 1/2 c Sliced onion 1/2 c Water --SAUCE-- 1 tb All-purpose flour 1/2 c Milk 1 Salt, sprinkle 1/2 c Grated medium or sharp 1 Pepper, sprinkle -cheddar chee; se -TOPPING- 1 tb Hard margarine (or butter) 1/4 c Fine dry bread crumbs Place carrot, onion, salt and water in 3 1/2 quart slow cooker. Stir. Cover. Cook on High for 4 to 5 hours. Drain. Place in serving bowl. Sauce: Stir flour, salt and pepper together in small saucepan. Whisk in milk gradually until no lumps remain. Heat and stir until boiling and thickened. Add cheese. Stir to melt. Pour over vegetables. Stir. Topping: Melt margarine in saucepan. Stir in bread crumbs. Heat and stir until browned.
