Guest guest Posted March 4, 2003 Report Share Posted March 4, 2003 hi y'all! i've made this soup several times...it's pretty good. i serve it with a salad and toasted pumpernickel or rye bread. enjoy! Cream Of Cauliflower Soup 2 tbsp. veg. oil 1/2 c. carrots, chopped 1/2 c. onions, chopped 1/2 c. celery, chopped 3 c. cauliflowerets (1 head) 4 c. vegetable broth 3/4 c. milk (skim or 2%) Dash cayenne pepper Salt Edam or Gouda cheese, shredded Heat oil on medium high and saute carrots, onion and celery for 5 minutes. Add cauliflowerets and broth. Bring to simmer and cook, uncovered, for 40 minutes. Stir in milk and pepper. Ladle soup into bowls, sprinkle with cheese, and serve. Serves 4.
