I was just looking up some information on Fennel and found the coolest site! Actually I was making Mediterranean Barley that someone posted and I couldn't find Fennel. I ended up using leeks and it was really good, I do know that Leeks are not a proper substitute for Fennel but it sounded good. Anyway this site is not actually vegetarian, but it has pictures of so many foods with descriptions and substitutes. I am very impressed with it, so here id the link http://www.foodsubs.com By the way, I will make the Mediterranean Barley again it was really good, though I do want to find some fresh fennel!
