It's quick and easy and absolutely delicious - I myself had not thought of cooking eggplant in this way, have never, to my memory, eaten eggplant even remotely like this. I have now printed it out and added it to my loose-leaf file of recipes to be repeated soon. Many many thanks for that ;=) Also, belatedly, thanks to Marie in the Netherlands for yet another of her tempeh recipes. This is one that also is quick and easy and absolutely delicious - the Indonesian Tempeh recipes from Family Circle Veg. Cookbook which was posted some weeks ago (it should be in the files).
