Okay, my feral friend, I've got this eggplant sitting in the fridge just

*begging* to be Mahoganized. But what weight or cup-measurement of

regualar eggplant to the equivalent of 'three long thin Japanese

eggplants' ??? I could probably experiment a bit, but it'd be nice if I

could try it the way you intended it ;=)

Oh that is a good question, and you would ask. *lol*

 

Japanese eggplant are about10 inches long and roughly

about the circumference of when your middle finger is

curved around to touch your thumb in a circle. So each

eggplant would give about 8 or 9 such sized 1 inch

thick chunks x 3... about 24 to 27 pieces that size.

Hope that helps. I am not sure the weight or how many

cups that comes out to.
