But what weight or cup-measurement of regualar eggplant to the equivalent of 'three long thin Japanese eggplants' ??? Guest guest Posted February 28, 2003 Report Share Posted February 28, 2003 Oh that is a good question, and you would ask. *lol* Japanese eggplant are about10 inches long and roughly about the circumference of when your middle finger is curved around to touch your thumb in a circle. So each eggplant would give about 8 or 9 such sized 1 inch thick chunks x 3... about 24 to 27 pieces that size. Hope that helps.
