Eastern Corn Chowder 6 slices of un-bacon [use your favorite brand] 2 Tbs olive oil 1 medium onion, chopped 1 clove garlic, minced 2 medium potatoes, diced Water 2 cups milk 1 cup 'white sauce mix' [recipe in files; will repost in next message] 1 (17oz) can cream-style corn 1 (8.75 oz) can corn 1 tsp salt Freshly ground black pepper butter garnish, optional Cook the un-bacon in the olive oil until crisp. Crumble and set aside. Reserve 1 tablespoon of the olive oil in the pan. Add onion and cook until starting to turn light brown. Add the garlic, potatoes and enough water to cover. Cook 10 to 15 minutes or until potatoes are tender. Combine milk with the white sauce mix in a saucepan. Stirring constantly, cook over low heat until thick and smooth. Stir in creamed corn, corn, salt and pepper. Add to the potato mixture and heat through 10 minutes. Top each serving with crumbled bacon and a dot of butter if desired.
