Let drain on paper towels and perhaps rub/press to get out the excess oil. Set aside. In a large pot fry onions in a little oil until they begin to brown. Add celery, mushrooms, peas and carrots, Add some veggie broth and cover and cook until veggie dices are mostly tender. Stir in mushroom soup, soy milk and tofu, and heat through. Serve over your favorite biscuits. If it seems too thin and watery for your taste, you can thicken it by adding one of these standard thickeners: - instant potato flakes - a mixture of cold water and flour (about 1/3 c to 2-3 Tbsp flour) - cornstarch and cold water Quote Link to comment Share on other sites More sharing options...

I usually have a recipe card infront of me as a muse of sorts, then I add or take away/alter it according to my taste. But I have very rarely just winged it. Bravo to those of you who can.
