This is another of those throw together meals, so there isn’t really a recipe, but the bf followed me around the kitchen writing things down, and this is what he came up with. He’s always amazed that a few cans thrown together can taste so yummy. Black Bean Filling: 2 cans black beans, rinsed and drained 1 small can chopped tomatoes with green chilis ½ small can of corn (niblets, not creamed), rinsed 1 small onion, chopped 3 cloves garlic, minced spices of your choosing (I used chili powder, cumin, and a dash of turmeric) Sautee onion and garlic in a bit of olive oil, very briefly, then add the canned ingredients. Stir in spices, and heat slowly over low heat, stirring frequently. It will thicken eventually, or just mash some of the beans. Rice with Pinto Beans 1.5 cups white rice ½ small can pinto beans, rinsed and drained ½ small can chopped tomatoes with green chilis 2.5 cups water Bring water to a boil in a pot with a tight fitting lidl, then add all ingredients, cover and simmer til rice is tender (about half an hour). Fluff with a fork. Rice and Black Bean Burritos: Let everyone make their own, by wrapping ingredients of their choice from the following into a warmed tortilla: Black bean filling Rice with pinto beans Diced tomatoes Shredded lettuce Sliced black olives Shredded cheese (I use a Mexican blend) Sour cream Hot sauce -- Sherri " This is all very interesting, and I daresay you already see me frothing at the mouth in a fit; but no, I am not; I am just winking happy thoughts into a little tiddle cup.
