Guest guest Posted February 26, 2003 Report Share Posted February 26, 2003 This is what we had for dinner last night. I served it with a tossed salad and some sauted Italian style vegetable blend. For dessert we had Poppy Seed Blueberry mini- loaves; recipe in file folder 'breads'. Baked Macaroni Cheese 2 cups macaroni 1 egg 2 cups milk 2 Tbs butter or margarine 2 Tbs finely minced onion 2 1/2 cups cheddar cheese, grated salt and freshly ground black pepper to taste 1. Pre-heat the oven to 350 degrees. Lightly boil the macaroni for about 5 minutes until half cooked. 2. Whisk the egg and milk together in a bowl. Melt the butter in a pan and saute the onion for 2 minutes. Stir the butter mixture into the milk along with the grated cheese. 3. Place the lightly cooked macaroni in a greased casserole dish. Pour the milk and cheese mixture over top, sprinkle with salt and pepper and stir all together well. 4.
