Guest guest
This is a recipe I came up with inspired by a recipe in a magazine that made a white chili using chicken. I just knew it would taste so much better without using animal flesh, and I was right. I also upped the amount of the chopped cilantro and added some Cajun spices. It was wonderful and I served it with rice, some torilla chips and a tossed salad. Zippy White Chili 1 small onion, finely chopped 1 tsp olive oil 1 3/4 cups low-sodium vegetable broth 1 can (4 oz) chopped green chilies 1/2 tsp Cajun seasoning 1/2 tsp garlic powder 1/2 tsp dried oregano 1/2 tsp ground cumin 2 Tbs minced fresh cilantro 1/8 to 1/4 tsp cayenne pepper 2 cans (15 oz each) white kidney or cannelini beans, rinsed and drained* In a saucepan, saute onion in the olive oil until just tender. Stir in broth, chilies, Cajun spice, garlic powder, oregano, cumin, cilantro and cayenne. Bring to a boil. Reduce heat and simmer, uncovered, for 30 minutes. Stir in beans; cook 10 minutes longer. Serve over rice or tortilla chips if desired. Yield: 4 servings *I used about 4 cups of beans I prepared myself and didn't use canned. ~ feral ~ The ultimate value of life depends upon awareness, and the power of contemplation rather than upon mere survival. ~ Aristotle (384-322 BC)
