When I cook, I usually have a recipe near by, but then I just use it as a sort of guide. Then, I either add more of the things I like and take away most of the items I don't find appealing; unless they are an essential ingredient in the chemistry of the item (especially in baking). I used to follow all recipes to the letter the first time around, and then would adjust or make notations for the next attempt. However, after getting better in the kitchen, more confident, I found doing this a waste of time.
