Guest guest Posted February 20, 2003 Report Share Posted February 20, 2003 I just couldn't think of a catchy title for this recipe I've made before. *lol* Crockpot Casserole 1 package Yves veggie ground 1 medium onion, chopped 2 tsp olive oil 1 medium green pepper, chopped 1 can (15.25oz) whole kernel corn, drained 1 can (4 oz) mushroom stems and pieces, drained 1 tsp salt 1/4 tsp pepper 1 jar (11oz) salsa 5 cups uncooked medium egg noodles 1 can (28oz) diced tomatoes, undrained 1 cup water 1 cup shredded cheddar cheese In a skillet, cook veggie ground and onion in olive oil until onions are tender. Transfer to a crockpot or slow-cooker. Top with green pepper, corn and mushrooms. Sprinkle with salt and pepper. Pour salsa over mushrooms. Top with noodles. Pour tomatoes and water over all. Sprinkle with cheese. Cover and cook on low for 4 hours or until noodles are tender.
