Guest guest Posted February 19, 2003 Report Share Posted February 19, 2003 This morning I typed up this recipe and titled it 'smoked vegetarian sausage soup'. *lol* I guess before I have a morning cup of coffee I am a subconciouscannibal; certainly a poor typer. Anyway, I used Boca brand smoked sausages. I wasn't sure about the ounces on the box since I don't have a box infront of me. This was one of those meat-eater's recipes that I converted. I added more herbs in mine that I didn't bother to measure or type in; pinch of basil, dash of cumin etc. Nothing fancy.... Vegetarian Smoked Sausage Soup 4 1/2 cups water 1 can (28oz) diced tomatoes, undrained 1 envelope onion soup mix 1 package (9oz) frozen cut green beans 3 small carrots, halved and thinly sliced 2 celery ribs, thinly sliced 1 Tbs sugar 1/2 tsp salt 1/2 tsp dried oregano 1/8 tsp hot pepper sauce (or more to taste) 1 package (12 to16 oz) vegetarian smoked sausage, halved and thinly sliced 2 1/2 cup frozen shredded hash brown potatoes In a soup kettleor Dutch oven, combine first ten ingredients. Bring to a boil and reduce heat; cover and simmer for 20 to 25 minutes or until vegetables are tender. Stir in sausage and hash browns; bring to a boil. Reduce heat, cover and cook for 5 minutes or until heated through.
