I'm barely cooking - still trying to dig out from the blizzard that dumped at least 2 feet of snow on us. So, tonite's dinner was enchiladas, the easy way. I took two tortillas, (10 " size? I'm guessing, but they might have been smaller), opened a can of vegetarian refried beans and plopped some on each one, sprinkled with already shredded cheddar, then rolled them up. I put them in a pan that I had thinly coated with mole negro (bought the last time I was at my favourite mexican takeout place - they make GREAT sauces and sell them at good prices), then poured more sauce on top, sprinkled on more cheese, and baked for about 15 minutes at 150F. Delicious, warming, and no fuss or bother. What? You were expecting a recipe in this weather?
