The trick is to not eat them all. They are more like a candy than a cookie. Butterscotch Bites 3/4 cup granulated sugar 1/4 cup butter 1/3 cup skim evaporated milk 1/2 cup butterscotch chips 1 3/4 cups quick-cooking oats 1/4 cup medium coconut 1. Combine the sugar, butter and evaporated milk with a mixing spoon in a microwave safe bowl. Microwave , uncovered, on high for about 2 minutes until the mixture boils. Stir. Microwave on medium for 1 minute. 2. Add the chips. Stir until melted. 3. Mix in the rolled oats and coconut. Cover a baking sheet with waxed paper. Drop the mixture by rounded teaspoonfuls onto waxed paper. Chill until firm. Keep chilled. Makes about 2 dozen bites. ~ PT ~ How do I love thee? Let me count the ways.
