I've been a member of this group for a few weeks now, lurking and enjoying the recipes and discussions, but I thought it was time for me to share a recipe of my own. I found this recipe in a book called " The Single Vegan " by Leah Leneman. I've modified it a little from her original (I double the recipe so it will feed more than one, and have added an ingredient or two), and I find these burgers to be *wonderful*. By the way, if you aren't vegan, I hear these taste just as wonderful with regular yogurt and sour cream. Enjoy! Chick Pea Burgers 1 can Chick Peas (Garbanzo Beans), drained 2 tablespoons vegan yogurt 2 teaspoons vegan sour cream 2 teaspoons tomato paste 2 teaspoons soy sauce 1 teaspoon marjoram 1/8 teaspoon onion powder 1/2 cup breadcrumbs (I prefer whole-wheat w/ Italian seasonings, but that's just me) Chopped scallion (optional) Whole wheat flour (as required) Organic vegetable oil Rinse beans, and mash in a bowl; a potato masher works best. Add yogurt, sour cream, soy sauce, marjoram, onion powder, breadcrumbs, and scallions to beans. Mix well and form into burgers. Spread a little flour onto a flat surface. Turn the burgers in the flour so that they are covered on each side. Refrigerate for half an hour or longer if convenient. Fry the burgers in a very small amount of oil until browned on both sides.
