Guest guest Posted February 17, 2003 Report Share Posted February 17, 2003 I love finding recipes like this that call for ground beef, are simple to make and yet can be easily converted to fit a vegetarian/vegan diet. I used Yves veggie ground and it made more than 4 servings for us, but perhaps b/c we don't eat huge portions and also due to the fact that one package Yves is 1 and 1/2 lb soy-burger. You can make this recipe vegan by using a soy yogurt in the sauce. Vegetarian Gyros 1 carton (8 oz) plain yogurt or soy yogurt 1/3 cup seeded chopped cucumber 2 Tbs finely chopped onion 1 garlic clove, minced 1 tsp sugar FILLING: 1 package Yves veggie ground (or favorite vegetarian ground " meat " sub) 1 1/2 tsp dried oregano 1 tsp garlic powder 1 tsp onion powder 1 tsp salt, optional 3/4 tsp pepper 4 to 6 pita breads, halved, warmed 3 cups shredded lettuce 1 large tomato, chopped 1 small onion, sliced In a bowl, combine first five ingredients, cover and refrigerate. In a skillet, heat the yves veggie ground and spices until warmed through. Stuff into pita halves. Add lettuce, tomato and onion. Serve with yogurt sauce.
