Guest guest Posted February 15, 2003 Report Share Posted February 15, 2003 Here is another version of sweet potato " fries " . Scrub clean one large sweet potato. Slice it as if for scalloped potatoes; cut the width, not lenghtwise. Place the slices in a skillet either sprayed, or a non-stick skillet. Pan fry over medium heat, turning once. The result should be lightly browned but soft. Delicious. I prefer this over baking as it is so much faster. A terrific source of beta carotene.
