Amount Measure Ingredient -- Preparation Method

SOAK TOGETHER:

3/4 cup dry textured soy protein (tvp) granules

3/4 cup boiling water or mushroom soaking water

2 tablespoons soy sauce

when liquid is absorbed -- add:

1/2 cup (4 oz.) regular medium-firm mashed tofu

1 tablespoon nutritional yeast

1 teaspoon onion powder

1/2 teaspoon garlic granules

when cooled thoroughly -- add:

1/2 cup pure gluten powder (vital wheat gluten)

 

Mix well and form into 8 patties OR 24-26 balls.

 

If the recipe calls for cooked minced " chicken " : steam them on a plate or a

steaming basket, covered, over simmering water for 20 minutes , or MICROSTEAM

them in a plastic microwave steamer in a covered bowl over 1 c. water for about

5 minutes, 1/2 a recipe at a time. This makes a moist product which firms up

nicely when cooled. They can then be browned in a nonstick or heavy skillet,

using a little roasted sesame oil, until crisp and golden on all sides.

 

If the recipe calls for raw ground " chicken " , don't steam it.

 

Yield: 8 patties or equivalent of 1 lb., or 24-26 balls

1 cup chopped onion

4 cloves garlic -- minced

1 1/2 cups textured soy protein -- dry

1 28-ounce can tomatoes -- chopped, with liquid

1 4.5-ounce can chiles -- (mild) chopped

1 6-ounce can tomato paste

1 teaspoon oregano

2 1/2 cups water

1 15-ounce can kidney beans -- rinsed and drained

1 15-ounce can black beans -- rinsed & drained

2 tablespoons chili powder

1 teaspoon cumin

 

Crockpot directions: Combine all ingredients in a crockpot. Cover and cook on

low for at least 8 hours.

 

Stovetop directions: Combine all ingredients in a large soup pot. Bring to a

boil, reduce heat and simmer, partially covered, for at least half an hour.

 

Yield: 10 servings Serving size: 1 cup

 

Per serving: 147 calories, 1 g total fat (0.1 g sat fat), 15 g pro, 28 g carb,

9.7 g fiber, 646 mg sodium, 0 mg cholesterol

TSP/ TVP

 

Amount Measure Ingredient -- Preparation Method

1 cup textured soy protein (TSP, also called TVP)

1 cup boiling water

1 16-ounce can sloppy joe sauce

4 whole wheat hamburger rolls

 

To rehydrate the TVP, place the TVP in a medium saucepan and pour the boiling

water over it. Add the sloppy joe sauce to the TVP; cook over low heat until

heated through. To serve, pour the TVP mixture over the hamburger rolls.
