Guest guest Posted February 14, 2003 Report Share Posted February 14, 2003 The natural foods/bulk store where I shop sells alot of bulk Amish- produced goods, and one of them is called " Harvest Soup " . This doesn't sound like much, but it is REALLY DELICIOUS. Here is what is in the mix (no, I don't have a recipe, but I can tell by looking at the bag): 1/4 cup dried yellow peas 1/4 cup dried green peas 1/4 cup brown lentils 1/4 cup red lentils 1/4 cup wild rice 1/4 cup brown rice That should make about a pound, which is the size bag I get. To make the soup, add about 8 cups water (I like to use part un-chicken broth) and simmer for 1 hour. Then add: 2 cups shredded cabbage 2 cups diced carrots 1 large can diced or crushed tomatoes 1 med. onion, diced (optional) about 1/2 lb soy beef crumbles (I add these when it's almost done) 1-2 bay leaves Simmer for an additional hour.
