midwinter gingerbread

Midwinter Gingerbread

1/2 stick butter

1/2 cup molasses

1 large egg

1/2 cup brown sugar

1 cup all purpose flour

2 tsp cinnamon

2 tsp ginger

1/4 tsp cloves

1/4 tsp salt

1 tsp baking soda

1/2 cup boiling water

1/2 cup orange marmalade or apricot jam

1/2 cup finely chopped pecans or walnuts

 

In small saucepan, melt the butter and molasses then set aside. In a mixing

bowl, combine egg and brown sugar and beat well. Pour in the melted

butter/molasses mixture and beat with electric mixer. Then by hand stir in

flour, spices and salt just enough to mix all together. Add baking soda to

the boiling water and stir well. Pour this mixture into the batter and gently

mix. Add marmalade and pecans and stir until just mixed. Pour into a lightly

greased 9x9 pan. Bake for about 30 minutes in a preheated 350 degree oven.

Gingerbread is ready when a toothpick inserted into the center comes out

clean. Cool for 10 minutes and invert onto a plate. Serve dusted with

powdered sugar or topped with whipped cream.

This sounds wonderful. I have never seen a gingerbread recipe

with orange marmalade in it. Yum. Thanks Anna.
