Guest guest Posted February 13, 2003 Report Share Posted February 13, 2003 Tomato Florentine Soup( feeds 4 or more) Start with five cups of water ad more as needed? ¼ cup of kidney beans ¼ cup of black eye peas sit them over night, boil them next morning (always rinse out bean and put fresh water next morning before boiling!) Cook them with ¼ cup of barley till tender. Then add a whole chopped onion, presses two garlic cloves saute in a Tsp. of olive oil. add a tsp of salt, dash or fresh of oregano, bazil, thyme add chopped two medium potatoes, 2 chopped carrots, 2 chopped celery stalks, (optional, small chopped pumkin 8 one inch pieces) 1 large tomato slices into one inch pieces, wash a colander full of fresh spinach and add. Cook for very little time on low heat 10 minutes, since the beans and barley are already cooked you don't want to over cook the veggies….
