Guest guest Posted February 11, 2003 Report Share Posted February 11, 2003 I'm not a vegetarian but I do enjoy this dish. It originates in Northhumberland a region in the north of England... Ingerdients:- Serves 4 60ml/tbsps oil 450g/1 lb firm potatoes, thinly sliced 1 large onion, thinly sliced 115g/4 oz/1 cup grated mature cheese salt and pepper Method:- Heat the oil in a large heavy frying pan. Remove the pan from the heat and arrangealternate layers of potato, onion and cheese. Starting and ending with potatoes. Season each layer as you go. Cook for thirty minutes, starting on a low heat. Increasing in stages so the underside of the mixture browns. Meanwhile preheat the grill (broiler). When the potatoes have cooked and the base browned. Place pan under grill(broiler) for five to ten minutes to brown the top onf the Pan Haggerty. Slide the Pan Haggerty on to a warm plate and cut into quarters.
