Guest guest Posted February 10, 2003 Report Share Posted February 10, 2003 I have not tried this using soy milk or almond milk, but after reading our discussion here and people's comments about it, I bet the vanilla flavor would work nicely in this recipe. You might not need to use the vanilla extract at all if you made it that way. Raisin Pecan Oatmeal 1/4 cup butter or margarine, softened 1/2 cup brown sugar 1 egg 1/2 tsp vanilla extract 1 1/2 cups quick-cooking oats 1 tsp baking powder 1/2 tsp salt 1/4 tsp cinnamon 1/2 cup milk 1/4 cup raisins 1/4 cup chopped pecans Additional milk In a mixing bowl, cream butter and sugar. Add eggs and vanilla; mix well. Combine oats, baking powder, salt and cinnamon; add to the creamed mixture alternately with milk. Stir in the raisins and pecans. Pour into a greased 2-qt microwave-safe dish. Cover and microwave on high for 4 minutes; stir. Cook at 50% power for 6 minutes or until oats are tender. Serve warm with additional milk.
