This is one of those recipes I found skimming thru a quick cooking magazine and adapted it to fit my vegetarian diet. It makes a nice winter day sandwich and also works out well in the summer when you don't need any extra heat in the kitchen. If you haven't yet tried the Boca brand sausages or brats, I recommend you do. They taste really good and they are guilt-free healthy; especially compared to real meat sausages and brats. My meat-eating family members even like them. Vegetarian Sausage Pepper Sandwiches 6 Boca Italian sausage 1 medium green pepper, cut into 1-inch pieces 1 medium sweet red pepper, cut into 1-inch pieces 1 large onion, cut into 1-inch pieces 1 can 98 oz) tomato sauce 1/8 tsp pepper 6 hoagie or submarine buns, split Thaw out the Boca sausage links in the microwave and cut into 1/2 inch slices or leave whole; place in a slow cooker. Stir in the peppers, onion, tomato sauce and pepper. Cover and cook on low for 4 to 6 hours or until vegetables are tender. Use a slotted spoon to scoop into hoagie rolls.
