Guest guest
Taco Pie 1 pkg. Yves veggie ground round (I never use the whole pakage, more like 3/4) 1 large onion 1 Tbs olive oil 1/2 cup salsa 2 Tbs taco seasoning 1/4 tsp pepper 1 cup shredded cheddar cheese 2 eggs 1 cup milk 1/2 cup biscuit/baking mix In a large skillet, cook veggie ground and onion in the olive oil over medium heat until onion is soft. Stir in salsa, taco seasoning and pepper. Transfer to a greased 9 inch pie plate; sprinkle with cheese. In a bowl, combine eggs, milk and biscuit mix just until blended; pour over cheese. Bake at 400 for 25 to 30 minutes or until a knife inserted near the center comes out clean. Yield: 6 servings Suggestions: Serve a slice of taco pie on a bed of shredded lettuce and have sour cream, extra salsa, chopped tomatoes and guacamoli on the side. ~ PT ~ Keep reading books, but remember that a book's only a book and you should learn to think for yourself. ~ Maxim Gorky
