It is also delicious as is if you are short on time and want something super-fast and good for you. Fast Fiesta Soup 2 cans (10 oz each ) diced tomatoes and green chilies 1 can (15.25 oz) whole kernel corn, drained 1 can (15 oz) black beans, rinsed and drained Shredded cheddar cheese and sour cream, optional (omit for vegan recipe) In a sauce pan, combine tomatoes, corn and beans; heat through. Garnish servings with cheese and sour cream if desired. Yield: 4 servings Nutritional analysis: One serving (prepared with no-salt-added diced tomatoes and without cheese and sour cream) equals 210 calories, 576 mg sodium, 0 cholesterol, 42 gm carbohydrate, 10 gm protein, 2gm fat, 10 gm fiber.
