Guest guest Posted February 4, 2003 Report Share Posted February 4, 2003 Easy Skillet Dinner 2 cups Tofurkey or Quorn brand meat-free roast, cut up into strips or diced 1 package (5.3 oz) fried rice mix** 1 Tbs butter or margarine 2 cups water 1/8 tsp cayenne pepper 1 & 1/2 cups frozen corn, thawed 1 cup frozen broccoli cuts, thawed 2 Tbs chopped sweet red pepper, optional In a nonstick skillet coated with nonstick cooking spray, saute vegetarian turkey until warmed through. Remove it from pan and keep warm. Set aside seasoning packet from rice mix. In the skillet saute rice in butter until lightly browned. Stir in water, cayenne and contents of seasoning packet. Bring to a boil. Reduce heat and simmer for 15 minutes. Stir in corn, broccoli, red pepper and tofurkey. Return to a boil. Reduce heat; cover and simmer for 6 to 8 minutes or until the rice and vegetables are tender.
