Guest guest Posted February 4, 2003 Report Share Posted February 4, 2003 That earlier post about grilled butternut squash made me think of other grilled vegetable side dishes I have used. Here is a quick easy way to grill potatoes. Using the frozen hasbrown cuts makes prep time a non-issue here. Works just as well with regular poataoes you prepare yourself, just requires a bit more cooking time. Grilled Hash Browns 3 & 1/2 cups frozen cubed hash brown potatoes, thawed 1 small onion, chopped 1 Tbs vegetarian " beef " or mushroom bouillon dash of seasoned salt dash of pepper 1 Tbs butter or margarine, melted Place potatoes on a piece of heavey duty foil (about 20x18 inches) coated with nonstick cooking spray. Spinkle with onion, bouillon, seasoned salt and pepper; drizzle with butter. Fold foil around potatoes and seal tightly. Grill, covered, over indirect medium heat for 10 to 15 minutes or until potatoes are tender, turning once.
