They weren't vegetarians, but they went all out for the meal and it was very touching. One of the things served was grilled butternut squash. Afterwards, I had to ask what they did. They cut the butternut in half, brushed all sides with oil. Then grilled each side for about 15 minutes. Then wrapped each 1/2 in foil, with the 'meat' of the it sticking up. Sprinkled salt and pepper on the inside, and closed the foil. Don't really know how long they cooked them in the foil, she just said until tender. MMMmm, Just wonderful. Btw, I think P_T's suggestion of using garlic powder w/ it would make it very tasty...to sorta counter the inherent sweetness of the butternut squash. karen Quote Link to comment Share on other sites More sharing options...
