Guest guest Posted February 3, 2003 Report Share Posted February 3, 2003 Orange Mini Muffins 1 & 3/4 cups all-purpose flour 2/3 cups packed brown sugar 2 & 1/2 tsp baking powder 1/4 tsp salt 1 egg 3/4 cup orange juice 1/2 cup sour cream 1/4 cup vegetable oil 1 Tbs grated orange peel 1 & 1/2 tsp vanilla extract In a large bowl, combine the dry ingredients. In another bowl, beat the egg, orange juice, sour cream, oil, orange peel and vanilla. Stir into dry ingredients until just moistened. Fill greased or paper-lined mini muffin cups two-thirds full. Bake at 350 for 18 to 20 minutes. Cool for 5 minutes before removing from pans. Yield: 4 dozen mini muffins ~*~ 12 regular-sized muffin cups may be used instead; bake for 23 to 25 minutes. ~ f ~ Nothing is ever lost by courtesy.
