This week I made up some soup that I thought was pretty good, I've been eating it all week. DH gave it the thumbs-down, though, he didn't like the sweet taste of the butternut squash. No recipe, I just made it up and here's what I used. Butternut squash, about 1 1/2 lbs, peel and seed 4-5 medium potatoes, peeled 1/4 cup wild rice 1 cup water Imagine brand Un-chicken broth 1 large onion, chopped Vegetarian bacon bits Peel and seed squash, and peel potatoes. Put both in pot of boiling water and cook about 20 minutes until soft. While this is cooking, prepare wild rice: add 1/4 cup of wild rice to 1 cup of boiling water, reduce heat and simmer 40-50 minutes. In a separate skillet fry the onion in a little olive oil until it starts to get brown and carmelize. Drain potato/squash mixture and mash somewhat, leaving some bite-size chunks. Add enough broth to make the mixture " soupy " , add fried onions, wild rice, and bacon bits to taste. Heat through and serve. Quote Link to comment Share on other sites More sharing options...
