Tofu Quiche Recipe

Hi Allison and everyone,

Sorry it took me so long to answer. I have been trying to find the right

cookbook. We moved a few months ago and half of my books are in the crawl space

under the house......... and there is NO way I'm going under there!

I'm pretty sure I can remember the recipe though. I believe the book is the

Gradual Vegetarian, if anyone else has it.

This will make one 8 " pie.

Line an 8 " pie pan with pastry (I buy the ready made)

Saute a medium-large onion, 1/2 lb fresh sliced mushrooms in a little veg. oil

until onions are translucent

place on a plate

In a medium sized bowl, combine 1/2 block of soft tofu, drained, 3 large eggs,

and 4oz cheese. beat well with a hand mixer to blend eggs and to break up tofu

as much as possible. Add salt and pepper to taste Plus your favourite herb to

taste if desired

Pour into pie shell and bake at 350 deg F for 25 minutes. Check after 20 mins as

all ovens are not created equal.

Serve with a green salad and french bread and some chilled fruit. Yummy!
