The magazine I copied it out of said it was an old family recipe over 100 years old. I have made it myself and it certainly has a wonderful old fashioned taste. Carrot Cake 2 cup flour 2 cups sugar 1/2 tsp salt 1 tsp baking soda 2 tsp ground cinnamon 3 eggs 1 1/2 cups oil 2 cups finely grated carrots 1 tsp vanilla extract 1 cup well drained crushed pineapple 1 cup flaked coconut 1 cup chopped nuts, divided Frosting: 2 packages (3oz each) cream cheese, softened 3 cups confectioners' sugar 6 Tbs butter or margarine, softened 1 tsp vanilla extract In a mixing bowl, combine the dry ingredients. Add eggs, oil, carrots and vanilla; beat until combined. Stir in coconut and 1/2 cup nuts. Pour into greased 13x9x2 inch baking pan. Bake at 350 for 50-60 minutes or unitl cake tests done. Cool. Combine frosting ingredients in a small bowl; mix until well blended. Frost cooled cake. Sprinkle top with remaining nuts. Store in refrigerator.
