Guest guest Posted February 3, 2003 Report Share Posted February 3, 2003 * Exported from MasterCook * Faux Fish Cakes Recipe By :Chef Randy Holman Serving Size : 8 Preparation Time :0:00 Categories : Analog Grains Meat Analog Side Dish Soyfoods Vegan Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound extra-firm tofu 2 cups cooked brown rice 1 small onion -- minced 6 tablespoons nutritional yeast flakes 2 tablespoons minced celery SEASONINGS: 2 tablespoons soy sauce -- (2-1/2) 1 tablespoon lemon juice 1 tablespoon sea salt 1/2 teaspoon dry mustard 1/2 teaspoon dill weed 1/4 teaspoon white pepper pinch celery seed 1/4 cup unbleached all-purpose flour Mix the tofu, rice, onion, yeast and celery in a large bowl. Process the seasoning ingredients, except for the flour, in a food processor until well blended. Add to the tofu mixture, along with the flour. Mix well. Form into 4-oz. patties and broil or pan fry for about 4 minutes on each side. Makes 8 servings. Sensational! S(Formatted by): " N.
