Cooking Lentils

Lentils are both fast and easy to cook. Seasoning them is another matter,

my advice would be to get your hands on some good cookbooks (or do some

searching online) and see what you can find. Burgers could be a good start.

 

Red lentils are best used in things, IMO, cause I swear they cook to mush

just by being passed over hot water! Brown (or green) lentils for use in

things like burgers. Red lentils, btw, are really good for thickening soups

and stews because they cook to a puree in about 10 minutes (I was

exaggerating just a touch before ...)

 

To cook lentils:

 

'Pour them into a sieve, remove any debris, and rinse them under cold

running water.

 

'Place the lentils in a saucepan with enough water to cover by 1/2-inch.

 

'Cover the pan, and bring to a boil over medium heat. Reduce the heat to

low, and simmer for 10 to 20 minutes, depending on the variety. They should

be cooked through and satiny, not hard or mushy.'
