Guest guest Posted February 3, 2003 Report Share Posted February 3, 2003 You can use all carrots in this, or a combination of carrots and various squash. Sorry, I don't have a recipe for cream cheese icing. I like this recipe because it makes a small cake - just enough. VEGETABLE CAKE 1 cup flour (can use part whole wheat if desired) 1 tsp. baking soda 1/2 tsp salt 2 eggs -or- equivalent egg replacer product 1 cup sugar 3/4 cup vegetable oil 1 Tbsp vanilla 1 tsp cinnamon 1 1/2 Tbsp wheat germ 1/2 cup chopped walnuts or pecans (optional) 1 1/2 cups vegetables of your choice (I usually use carrots, zucchini, pumpkin...) Grease and flour a 9-inch pan. Place vegetables in food processor and process until finely chopped, and there is about 1 1/2 cups. Set aside. In a large bowl beat together eggs, sugar, add vanilla, oil, cinnamon, mix well. Add dry ingredients and wheat germ, mix well. Lastly mix in chopped veggies and nuts.
