veggie tofu loaf

4 slices of wheat bread cut in 1/2 cubes

1 tablespoon of canola oil

2 stalks of celery finely chopped

1 large carrot chopped

1 onion chopped

3 garlic cloves chopped

1 1/4 pounds of tofu

1 cup of nutrional yeast

1/2 cup tahini

1/2 cup of chopped fresh basil or 1 teaspoon of dried basil

1/4 cup of chopped oregano or 1 teaspoon of dried oreango

1/2 turmeric

3 tablespoons of tamari sauce

1/4 teaspoon of pepper

 

preheat oven to 350, lightly oil pan(loaf pan)

Put bread cubes on an ungreased baking sheet and bake for 5-7minutes. Stir

bread and bake until lightly brown(3-5 minutes more). heat oil in large

frying pan and add celery, carrots, onion, garlic, and cook until tender.

Remove from heat. Put tofu in large bowl and mash well. Add nutrional

yeast,tahini, tamari sauce, and herbs, mix well. Add the bread and veggies

mix well. Mix and make into loaf cook for 50 -60 minutes.
