Guest guest Posted February 1, 2003 Report Share Posted February 1, 2003 When I was a little girl my Mom use to make me this very simple dish. She would cook egg noodles until just tender. Then in a small skillet she would melt butter. She then would tear up bread into cubes and throw into the hot butter and make croutons. When these were golden brown she would toss them with the egg noodles. Sometimes she would add a dash of parsley or Parm cheese. I make this for my kids who also like it. Soy nut butter is my fav, peanut butter is also good Granola bars Cereal with soy milk Leftovers! These are our favorite quick snacks. If you want a real dinner, these are what usually come to mind - Pasta - cook some noodles, warm some sauce, toss on some shredded mozarella cheese and nuke until melted. (you can dress it up with black olives, chopped veggies, anything else you like under the cheese) Serve with salad and/or garlic bread if you have it. Mexican - layer on chips, tostadas, or put in a burrito - mashed canned beans, some fake hamburger (saute with salsa if frozen), salsa to taste, bannana peppers, hot peppers, black olives, shredded cheese - nuke until melted. Then add shredded lettuce and chopped tomatoes. (our favorite ingredients, but you can use anything you like) Sandwiches - split french bread lenthwise and cut into managable sections, brush with olive oil and balsamic vinegar (you can broil/toast it at this point while you get the rest of your stuff together) Thaw some frozen spinach and put on, then feta cheese, tomato slices dipped in seasoned bread crumbs. Broil until cheese starts to melt. Fake chicken patties or hamburgers, nuked, on a bun. Whatever veggies are on hand, also nuked. Call the Thai resturant for take out, or the pizza man.
